Need a great punch recipe for the holidays? Try this Christmas Punch! The flavor is fruity and delicious, with a little sparkle from ginger ale. You can make it with rum for a punch with alcohol, or omit it for non alcoholic. Either way, it tastes incredible!

As two drink and cocktail experts, we’re big fans of punches and pitchers because they make it so simple to serve a crowd. Garnish it up with sliced citrus, rosemary branches, and cranberries, and it makes a festive centerpiece for any gather.

Ingredients in this Christmas punch recipe

This Christmas Punch recipe is easy with minimal ingredients, perfect for no-fuss holiday entertaining! When it comes to punch, we’ve found that it’s not any “anything goes” situation. After some careful testing and tweaking, we found the perfect combination of juices, carbonated bubbles, and optional alcohol. Here’s what you’ll need:

  • Cranberry 100% juice blend: This blend of juices is available at most grocery stores, and typically blends grape, apple, and pear juice with cranberry juice. Make sure to look for “100% juice” or “no sugar added” on the label.
  • Pineapple juice: Pineapple adds just the right tropical flair; it’s great for using in punch recipes.
  • Ginger ale: Ginger ale adds just the right carbonation! It’s sweeter than ginger beer, which would also work but has in a spicier ginger flavor.
  • Rum: This makes it into a Christmas rum punch! But it’s just as good without as a non alcoholic punch.

Make it with rum or non alcoholic

You can add the alcohol right to the Christmas punch, of course! But if you’re entertaining with kids, it’s nice to allow drinkers to spike the drink afterwards. This offers most flexibility—you can serve both an alcoholic and non alcoholic punch at the same time!

  • Add the rum to the punch bowl. If you’re serving all adults, throw the rum right in.
  • Or, spike the drink afterwards! The better way to make an alcoholic Christmas punch is to spike the drink after you ladle it out of the punch bowl. This makes it work for both kids and adults! The best ratio is 2 ounces rum (¼ cup) to 8 ounces (1 cup) punch.
  • Or, serve it as a non alcoholic punch! It’s just as delicious.

Three Christmas punch alcohol options

What’s the best alcohol for Christmas punch? Here are a few options and how it changes the flavor:

  • Rum: Aged rum, aka añejo rum, has notes of vanilla, coconut, almond, citrus, or caramel. White rum has a straightforward flavor with a signature fruity finish. Dark rum would make the color very dark, but you can use it if you like—it adds deep, caramel flavor and notes of cinnamon and spices.
  • Bourbon: Bourbon is also ideal for a Christmas punch! Bourbon adds spicy notes, with hints of vanilla and caramel.
  • Champagne or Prosecco: Or, go for a bubbly punch! Add champagne or Prosecco right before serving (see Holiday Punch).

Ways to garnish the bowl

The best part about a good Christmas punch recipe? All the garnishes! A good punch has some lovely garnishes floating on top. Here are some of our favorite ideas:

  • Sliced citrus: orange, lemon or lime
  • Pineapple rings
  • Whole spices: star anise, cinnamon sticks, or cloves
  • Rosemary sprigs
  • Fresh or frozen cranberries or raspberries

Serving notes to preserve the bubbles

This Christmas punch takes just a few minutes to throw together. But if you want to prep some items in advance, here’s what to do!

  • Chill the liquids in advance. Adding ice waters it down too much, so chill everything prior to serving.
  • Slice the citrus and assemble the garnishes. Make sure you’ve got everything on hand. Refrigerate the citrus until serving.
  • Add the ginger ale right before serving. You can pour everything in the bowl, but try to add the ginger ale right before serving. This way you get the best bubbles!

The other day we were out at a restaurant and something on the cocktail menu sparked our interest: a “pickle martini.” Since Alex and I are lovers of all things dill pickles and authors of hundreds of cocktail recipes, of course we had to give it a try.

This drink tastes exactly how it sounds—adding pickle juice to a dry martini infuses it with briny, salty flavor. It makes for one irresistible sip (at least for pickle lovers!). Here’s how to make one for yourself!

Ingredients in a pickle martini

A pickle martini is simply a dirty martini with pickle juice instead of olive brine. You’ll need to dial up the pickle juice for it to shine through, so it uses double the pickle juice versus our dirty martini recipe. Here are the ingredients you’ll need:

  • 2 ounces gin
  • ½ ounce dry white vermouth
  • 1 ounce dill pickle juice (brine)

Best type of gin

A pickle martini will only taste as good as the gin you invest in! We recommend using a mid-priced gin here. Here are a few notes on types we like:

  • Malfy and Beefeater London Dry have a developed, botanical flavor that blends well in cocktails.
  • Locally distilled gin is a great option! In Indianapolis, we like 8th Day Distillery, Hotel Tango, and Big Heart Gin.
  • Avoid strong flavored gin. For us this includes brands like Tanqueray gin (very floral) and Opihr gin (spice-forward). These types of gin may not complement the pickle juice.

Serving a pickle martini

A tradition with the classic dry martini: it should be served ice cold. It’s not served with ice, so purists serve it in a chilled glass. Do what suits you here, of course! It’s not necessary, but it makes for an even more sensory experience. You can also serve a martini on the rocks (with ice) in an Old Fashioned glass: but we prefer ours straight up.

For a dill pickle martini, you’ll also want to serve it with a dill pickle or two as a garnish! Using a cocktail pick makes it fit well in the glass.

If there’s one Italian food we’re head over heels for, it’s gnocchi—those pillowy balls of dough that are considered “pasta” but should be in some other category of their own! Here’s our latest creation with our favorite ingredient: this baked gnocchi recipe.

The gnocchi baked up in a tangy marinara sauce and layered with goat cheese and burrata (or fresh mozzarella). You don’t even have to boil the gnocchi—just throw it in the pan and bake! It’s so simple and everyone we’ve served it to adores it. It makes a big pan that’s great for entertaining, perfect as a main dish or side dish for dinner parties or a Christmas recipe—and it works just as well for weeknight dinners.

Ingredient notes for baked gnocchi

This baked gnocchi recipe is extremely simple—as we mentioned, you don’t even have to boil the gnocchi! It cooks right up in the sauce while it’s baking. Here are a few ingredient notes for this recipe:

  • Packaged gnocchi: This recipe is for packaged dried gnocchi; do not use homemade gnocchi as the texture may not hold up.
  • Marinara sauce, fennel, garlic, oregano and basil: This is our trick to make marinara sauce taste homemade: simmer it with a few extra herbs and spices before baking.
  • Goat cheese (chevre): This adds a creamy body and irresistible tangy flavor to the sauce. The way it melds into the sauce will please everyone, even people who don’t think they like goat cheese.
  • Burrata cheese (or fresh mozzarella): Burrata is a fresh Italian cheese filled with cream; it’s a gourmet ingredient that’s now easy to find at your local grocery (packaged and sold in water). It adds huge flavor to the dish! You can also use fresh mozzarella.

Tips for using burrata cheese

Burrata is an Italian fresh mozzarella cheese with a surprise inside: the center is filled with cream! The creamy interior also contains cheese shreds, called straciatella. This cheese originated in Southern Italy and is now served all over the world.

This recipe calls for only 1 ball of burrata. It used to be only sold in 2-ball packages, but lately we’ve found you can buy 1 ball packaged separately! It’s a nice way to save a little money. Or, you can use the extra ball in burrata recipes like burrata salad or a burrata sandwich.

Customize by adding protein or greens

This baked gnocchi recipe is a delicious vegetarian main dish or side dish as is. To add even more protein, you can also add 1 pound cooked ground sausage, beef or chicken to the pan with the gnocchi and bake for added protein.

Another idea is adding greens: add a few handfuls of baby or chopped spinach to the marinara sauce and allow it to wilt before adding the gnocchi and baking.

Storing leftovers

This baked gnocchi recipe is best when it’s freshly baked, since the gnocchi is the most soft and pillowy! However, leftovers can be stored up to 3 days refrigerated and still taste great. Make sure to reheat gently on the stovetop or in the microwave (you can also reheat in the oven).

Dietary notes

This baked gnocchi recipe is vegetarian. For gluten-free, use gluten-free gnocchi.

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon fennel seeds
  • 24-ounce jar quality marinara sauce
  • 1 teaspoon dried oregano
  • 1 handful fresh basil, roughly chopped, plus more for garnish
  • ½ teaspoon kosher salt
  • 2 16-ounce packages gnocchi
  • 4 ounces goat cheese (chevre)
  • 4-oz ball burrata cheese (optional; or fresh mozzarella), torn

Instructions

  1. Preheat the oven to 400°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and fennel seeds and cook for 1 minute. Add the marinara sauce, oregano, basil, and salt. Stir in half the goat cheese. Heat for 1 minute. Add the gnocchi (uncooked) and stir until combined.
  3. Pour the mixture into a medium baking dish (about 7 x 11”). Top with dollops of the remaining goat cheese and add the burrata or mozzarella, tearing it into 1-inch chunks. 
  4. Bake until the gnocchi is tender and the cheese is melted, about 25 minutes. If desired, broil to brown the cheese (about 2 minutes or so). Garnish with more chopped fresh basil and serve. 

Notes

If desired, you can add 1 pound cooked ground sausage, beef or chicken to the pan with the gnocchi and bake for added protein. Or, add a few handfuls of baby or chopped spinach to the marinara sauce and allow it to wilt before adding the gnocchi and baking.

When Alex and I are entertaining, we love having a signature drink that works as both a cocktail and a mocktail. Introducing our new favorite: this fun and festive cranberry mocktail! Often mocktails can taste like glorified juice, but this one tastes bubbly, sweet tart and delicious with only three ingredients.

It’s a ginger beer mocktail that has a hint of spicy complexity, and you can muddle in a little rosemary for a sophisticated finish. We first made this as a Christmas mocktail version of our Cranberry Aperol Spritz, but it also works in summer as a cranberry orange mocktail. It gets rave reviews every time we serve it!

Ingredients in this cranberry mocktail

Alex and I love mocktails almost as much as we love cocktails (we have over 300 cocktail recipes in our library). But often when we’re out and we order one, it tastes one note: basically like fruit juice! This cranberry mocktail is more interesting without the need to make fancy ingredients like fancy simple syrups. Here’s what you’ll need:

  • 100% cranberry juice: We like using 100% juice because it’s naturally sweet tart and has a bright red color. Juice labeled cranberry cocktail has added sugar.
  • Orange juice: You can use purchased juice (without added sugar) or fresh orange juice for an even tastier cocktail.
  • Ginger beer: Ginger beer adds a nuanced, spicy kick to this cocktail and a bubbly fizz. Ginger ale works as a substitute, but it makes a sweeter drink.

Top brands of ginger beer

There are many types of ginger beer brands on the market. We love using small cans or bottles, since if you open a large bottle the bubbles subside after a few minutes. Here are a few notes on the top brands:

  • Q Ginger Beer: This is our top choice! It has great flavor and is made with real ginger. It comes in small cans that are perfect for a few drinks.
  • Fever Tree Ginger Beer: Fever Tree also has great flavor and is our backup! It’s made with real ginger and has no artificial sweeteners.

Garnish ideas

We garnished our cranberry mocktail with fresh rosemary and mint. If you’re making it as a Christmas drink, fall drink, or winter drink, rosemary is perfect. It also works in summer, so mint is preferable in the warmer months.

If you’d like, you can also add an orange slice to this drink as a garnish to make it even more festive!

Here’s a cocktail recipe that’s so fun and easy, we want to make it in every season: the cranberry Aperol spritz! Using tart cranberry juice tones down the sweet Aperol, making a drink that’s fruity, balanced, and even tastier than a standard Aperol spritz (in our opinion!).

This one is so perfect for parties because you can pour it up right in the glass: no cocktail shaker required! It’s great for fall and winter (we first served it as a Christmas cocktail) but it honestly also works in summer: just add a orange wedge garnish!

The cranberry Aperol spritz is a spin on the popular Aperol spritz, an Italian aperitif. The concept has been around for hundreds of years, but the Aperol spritz took the form it has today in the 1950’s. This spin simply adds cranberry juice, which balances the flavors in what can be a very sweet drink. Here’s what you need to make a cranberry Aperol spritz:

  • Aperol: Aperol is an Italian bitter (amaro) with a lightly sweet flavor and notes of herbs and citrus. It was invented in Italy in 1919.
  • Prosecco: A sparkling white wine from Italy’s Veneto region, known for its delicate flavor and light bubbles. You can use any type of champagne if desired.
  • Cranberry juice: We like using 100% cranberry juice for the brightest color and pure, tart flavor.

More about the spritz

The spritz is a drink invented in Italy that combines three ingredients: liqueur, sparkling wine (usually Prosecco) and soda water. You can make a spritz of any type using these two ingredients and any mixer of your choosing. The basic spritz ratio is 3 parts sparkling wine, 2 parts liqueur, 1 part soda water. This cranberry version omits the soda water and adds cranberry juice.

The most popular spritz is an Aperol Spritz, but you can also make a Limoncello Spritz, Campari Spritz, and  St Germain Spritz (also called the Hugo).

Making multiple servings at once

The cranberry Aperol spritz is perfect for parties, and it’s easy to make several servings at once! Here’s what to know:

  • If you’re making 2 drinks, a mini bottle is perfect—it holds 187 mL or about 6 ounces! For 4 drinks, use a half bottle 375 ml (12 oz).
  • A 750 ml bottle of Prosecco is 25 ounces, enough for 8 drinks.
  • If you’re serving 8, mix up 1 ½ cups Aperol and 1 ½ cups cranberry juice. Into each glass, pour 3 ounces (6 tablespoons) of the mixture and top with 3 ounces Prosecco.

Garnishing a cranberry Aperol spritz

The cranberry Aperol spritz is a great fall cocktail or winter cocktail, but it also works in warm weather as summer cocktail, depending on the garnishes. If you want to take it over the top, try the following:

  • Throw in a straw. A gold straw work well here; it also helps to minimize dilution.
  • Serve with clear ice. This ice is crystal clear, with none of the cloudiness of normal ice. You can cut large chunks and they look just like a fancy bar! All you need is 24 hours. See How to Make Clear Ice.
  • Add a citrus wedge and frozen cranberries. Lemon or orange works great!
  • Add herbs. In winter use a rosemary sprig. If serving in summer, a sprig of thyme or mint would work perfectly.

The Poinsettia drink is festive, perfect for entertaining, and even better: uses only a few ingredients. It’s a cranberry champagne cocktail, so you can call it that if you prefer.

The Poinsettia is perfect for winter and fall when cranberries are in season. With its vibrant color, it’s fantastic for the holidays as a holiday party drink, Christmas drink, and New Year’s Eve drink. But you can make it any time of the year! Here’s what’s in this cranberry champagne cocktail:

  • Cointreau (or other orange liqueur)
  • Cranberry juice
  • Champagne

That’s it! Of course, the garnish is what takes it over the top. All you’ll need is a few rosemary branches and some fresh whole cranberries. You can use the leftovers for holiday decorations like a table centerpiece or try them in our moist and citrusy cranberry orange bread.

Make sure to find 100% cranberry juice

The most important thing to note with the Poinsettia drink is this: make sure to find 100% cranberry juice! There are lots of variations of cranberry juice on the shelf, and many of them have added sugar. If you find bottles labeled cranberry juice cocktail: stay away! It has added sugars or high-fructose corn syrup for extra sweetness.

Alex accidentally bought the sweet stuff when making this cranberry champagne cocktail recipe. Sadly, it turned out tasted overly sweet and “fake” tasting. When we looked at the bottle: it wasn’t 100% juice! I dashed off to the store and we remade it with 100% cranberry juice. It tasted perfectly crisp and tart: exactly what we wanted! So make sure to check the label and find 100% cranberry juice for the Poinsettia.

Can you make a non-alcoholic Poinsettia drink?

You absolutely can make this Poinsettia drink without alcohol! All you have to do is substitute non-alcoholic sparkling cider, grape juice, or wine for the champagne and orange juice for the Cointreau. These days there are some great non-alcoholic sparkling wine options on the market. You could also try this Cranberry Mocktail with ginger beer.

Making mocktails or 0 proof cocktails is perfect for including people who don’t drink alcohol, pregnant women, or kids. Our kids always wants to drink what we’re drinking—so you could make up some kiddie cranberry champagne cocktails for the young ones!

  • 2 tablespoons Cointreau, or other orange liqueur

  1. Place the cointreau and cranberry juice in a cocktail shaker with ice. Shake 15 seconds until cold. Strain the liquid into a champagne flute. (You can skip this step if the cranberry juice is well chilled.)
  2. Top off the glass with champagne (no need to measure). Garnish and serve. (Note: You can also make a large batch of cointreau and cranberry juice ahead if desired, then measure out 6 tablespoons per glass.)

Here’s an easy appetizer that looks stunning and relies on simple, spot-on flavors: smoked salmon appetizer bites! The classic combination of smoked salmon, dill, cucumber and cream cheese is a hit every time.

As cookbook authors and recipe experts, Alex and I love working with smoked salmon because it brings an instant intense savory, smoky flavor with no cooking whatsoever! Mix the cream cheese with fresh dill, green onion and Dijon for a rich, zingy pop. Make up this platter for a party, and people won’t be able to tear themselves away!

Ingredients for this smoked salmon appetizer

Smoked salmon is ideal for appetizer spreads: its bold, smoky and salty flavor and 0-minute prep time make it a favorite around here. The basic idea: mix the cream cheese with mayo, Dijon, fresh dill and green onion. Dollop onto the cucumber slices and top with smoked salmon and a sprig of fresh dill. Here’s what you’ll need (or go to the recipe):

  • Smoked salmon: We prefer cold-smoked salmon here which has a soft texture (the type used in lox). However, hot-smoked salmon also works: it has a flaky texture.
  • English cucumber: English cucumber is longer and thinner than a standard cucumber, and you don’t need to peel it! See below for more.
  • Cream cheese
  • Mayonnaise (or substitute plain or Greek yogurt)
  • Dijon mustard
  • Fresh dill
  • Green onion

Why to use English cucumber

This smoked salmon appetizer is great no matter what cucumber you find, but we highly recommend looking for an English cucumber. Why use it here?

  • English cucumbers are long and straight, and have a thin skin with ridges. The seeds are almost imperceptible and the flavor is sweeter than a standard cucumber, so it doesn’t need to be peeled or seeded before eating! Because the thin skin is so fragile, it’s sold with a plastic covering in the grocery store. No only does it taste better, it has a brighter green color.
  • Standard slicing cucumbers are shorter, with thick, dark green skin and large seeds. The thick skin and seeds can be bitter, so they’re often removed when cooking. You can substitute a standard cucumber here, but you may want to peel it.

Tips for serving for a party

This smoked salmon appetizer recipe makes about 20 slices. Depending on the party you’re making them for, this might be enough: it fills a large circular plate. But if you’re serving a big party, make a double recipe! You’ll need only one English cucumber for an entire recipe.

If making for a party, you can make the smoked salmon appetizer bites in advance and refrigerate until serving. Refrigerate up to 1 day prior to serving. Anything beyond that and the cucumber slices can become dried out or mushy.

  • 1/2 English cucumber (20 slices)*

What we love about fried potatoes: they’re simple, humble, and quick! No need to wait for an oven to preheat like with roasted potatoes. We love using them for dinners where you’ve got something roasting in the oven already, or as breakfast potatoes for a fancy brunch. Here’s what you’ll need:

  • Yellow or red potatoes: A waxy potato works best here. Avoid russet potatoes (aka starchy potatoes), which are better for mashed potatoes or baked potatoes.
  • Butter and olive oil: Using a combination of fats adds complexity and nuance to the flavor: you can taste the difference! The butter is savory and rich, and the olive oil adds a subtle nuttiness. We started using butter and olive oil in a combination years ago, and we love pulling out this trick to make things taste incredible. For vegan, substitute the butter with more olive oil or vegan butter.
  • Smoked paprika, garlic powder, thyme, and salt: This combination of spices makes a deliciously savory flavor.

Smoked paprika is key

Smoked paprika is a must in these fried potatoes, if you can find it! It’s a Spanish version of paprika that adds a smoky flavor without heat or spice! It’s made up of dried pimiento peppers that that are smoked over a fire, then ground. You can find smoked paprika in the spice aisle in most grocery stores. You can also buy it online here!

  • Smoked paprika may be labeled as any of the following: pimentón, Spanish smoked paprika or sweet smoked paprika.
  • Avoid hot smoked paprika: it’s too spicy and not interchangeable.
  • If you can’t find it, substitute standard paprika, sometimes called sweet paprika or Hungarian paprika.

Use any skillet, like non-stick or cast iron

You can use any type of skillet to make these fried potatoes! It’s easier to use a non-stick skillet, though of course a cast-iron skillet feels more sturdy and rustic. If you’re using cast iron or aluminum, make sure that potatoes are fully browned before you flip them. When they brown, they release better from the pan.

  2. To keep them whole for salads and Texas caviar, cook them 40 to 50 minutes until just tender but they still hold their shape, then drain. Serve immediately or refrigerate for up to 5 days. You can also freeze for up to 8 months. Place the drained black eyed peas into a sealable storage container like a mason jar. It’s helpful to freeze them in 1 ½ cup increments, which equals 1 15-ounce can of beans.
  3. For the creamy side dish, cook 55 to 60 minutes until very tender and just starting to break down. If the beans start to appear before becoming tender, top off with water to keep the beans just barely submerged. At the end of cooking there will still be a good amount of water: you’ll use this to create the creamy sauce. Add the garlic, smoked paprika, oregano, onion powder, and butter (optional), then turn up the heat and stir vigorously for a few minutes until a creamy sauce forms. Serve immediately or refrigerate for up to 5 days.

What’s for dinner tonight? It all started with a challenge from my sister. I asked her what kind of recipes she’d like to see on our website. She asked, “Can you make a 5-minute dinner recipe?” Of course, that got our wheels turning. Because the question we’re asked again and again is: What are your top quick and easy dinner ideas?

  • The format: a taco. We often make tacos or quesadillas as weeknight dinners, and they’re a good format for quick and easy dinners.
  • The filling: a taco-spiced scramble. Adding cumin, chili powder, and garlic powder to scrambled eggs and cooking them on low heat magically forms a meaty substance that’s perfect for tacos. The texture looks oddly similar to chorizo.
  • The verdict: so good. We whipped up a batch and served our 5-minute tacos to my sister. Her response: “Whoa. These are SO good.”

Can you really make them in 5 minutes?

That’s a good question. 5 minutes is pretty ambitious, right? Our answer: Yes, these tacos can be made in 5 minutes. Depending on your environment, it may take you between 5 and 10 minutes to finish this recipe. But either way: it’s one of the quickest dinner ideas you’ll make. Here’s what you need to pull it off in 5 minutes:

  • A quick chef who’s confident in the kitchen.
  • No children or pets interrupting things!
  • Memorizing the recipe before you start. We’ve made it easy to memorize using ½ tablespoon of all the spices and olive oil.

How to keep tortillas warm

A warm tortilla is key to a good taco. You can warm them over a flame on the stovetop, in a skillet, or in the microwave (see How to Warm Tortillas). Tortillas start cooling the moment they’re off the flame, so they can end up cold within minutes.

Luckily, there’s an invention for this problem: tortilla warmer! It’s an insulated pouch traps in the heat and keeps them perfectly heated. It’s optional, but we like having one around at the rate we eat tacos!

  • 4 eggs

  2. In a skillet, heat the olive oil. Add the eggs and cook over medium low heat, scraping as the eggs solidify, about 3 to 4 minutes total. As you scrape, they’ll start to form together into a meat-like texture. Don’t scrape too much or you’ll make too small of pieces: just enough for that it comes together! 
  3. If time, warm and char the tortillas by placing them on an open gas flame on medium for a few seconds per side, flipping with tongs, until they are slightly blackened and warm. (See How to Warm Tortillas.)
  4. Top with salsa fresca (drain extra liquid before serving), thin sliced red onions, torn cilantro leaves, and hot sauce.

The filling for these quick tacos we call taco-spiced eggs. We stumbled on this trick and we use it all the time. Tips for cauliflower tacos

We have a delicious cauliflower tacos recipe in our first cookbook, Pretty Simple Cooking, and this one is a riff on it. The best part is the crispy breaded cauliflower, roasted up with a lightly spicy breading.

For the toppings, stay simple with refried black beans, tart cabbage slaw, and cilantro. (We used canned refried beans, but you can also make our homemade refried beans.)

The Yum Yum Sauce is what makes the recipe! Yum Yum Sauce is used in Japanese steakhouses and served with seafood, but here we’ve used it as a bit of a “fusion” element to accessorize with this vegetarian taco recipe. It’s so tasty and adds a richness to the tacos that’s incredible.

  1. Make the Crispy Breaded Cauliflower (about 40 minutes total; use the remaining time to complete the steps below.)
  2. If using purchased refried beans, taste and if needed, mix with ½ teaspoon cumin and/or a pinch or two kosher salt. (Or, you can make our Supremely Simple Refried Black Beans but for this recipe we preferred using storebought so we could focus on the cauliflower!)

  6. Chop the cilantro for a garnish.

Did you know you can make the best fries of your life—homemade? Yes, we’re pretty confident that these seasoned fries will blow you away! For years, Alex and I have been perfecting the art of homemade French fries and we’ve picked up some tips to getting the very best fries possible.

They do take a bit of time! But if you have to work for your food, it makes it that much more special: right? These are baked in an oven until crispy and coated in the perfect seasoning blend. Ready to become a French fries expert?

Ingredients for seasoned fries

First up: let’s talk French fry seasoning. We’ve tinkered with a whole lot of seasoning blends, and come up with this one. It brings out the best savory, salty flavor in your fries. Here’s what you’ll need:

  • Smoked paprika: This is the Spanish version of paprika that’s made with smoked peppers. It infuses a hint of smokiness into each bite. (There are lots of smoked paprika recipes to use up a jar.)
  • Old Bay: Old Bay is a seasoning blend from the American East Coast: it’s often used to season seafood and potatoes. It brings a savory, irresistible flavor to each bit. Look for Old Bay in the spices aisle in the grocery or buy it online. You can also make homemade Old Bay seasoning.
  • Garlic powder: Garlic powder adds just the right savory flavor.

How to cut seasoned fries: by hand

Once you’ve compiled your spices, you’ve got to cut the fries! You can cut seasoned fries two ways: by hand or with a French fry cutter. We make fries so often that we got a special cutter (below). But you can easily cut them by hand! Here’s our fast and easy method (or watch this video):

  • Slice off the ends of each potato, then slice off part of the side to make a base.
  • Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long 3/8-inch wide strips.
  • Repeat until all potatoes have been cut into fries!

Or, use a French fry cutter!

Here’s an option only if you think you’ll make fries a lot: a French fry cutter! Typically Alex and I don’t recommend one-use gadgets. But this one is so slick, we couldn’t resist. A French fry cutter cuts fries from a potato in 1 second! (Really.) It’s easy to use and pumps them out in a jiffy. The only downside: finding storage space for a one-use gadget. Here’s a link to the French fry cutter we use.

Secret to the best seasoned fries: a 10-minute soak

Here’s what you need to do to make the very best seasoned fries: soak them in cold water for 10 minutes. Now, some recipes call for soaking fries for up to 1 hour or more, or even boiling them first. But after lots of tests, we found you only need 10 minutes in cold water! Here’s why:

  • It makes the outside crispy and inside tender. There’s a notable difference when you soak before you bake.
  • You can soak while your oven preheats! Here’s the thing: you don’t lose any time because you can do it while the oven is preheating. Ideally you can cut, soak and season the fries before the oven is ready to go.

Bake in the oven until crispy

Here’s another nice thing about these seasoned fries: they’re baked, not fried! That makes them a healthy seasoned fries option (more on that, below). You’ll cook at high temperature (425 degrees) to get just the right golden exterior. There are only a few tricks to getting them perfectly crisp. Here’s what to know:

  • Space out the oven racks. Make sure your oven racks are evenly spaced for the most even cooking. You’ll also want to reverse the trays in the oven after you pull them out to flip.
  • Spread the fries in an even layer. Having air between each fry is very important to getting them crispy. If you overcrowd the tray, you’ll get soggy fries.
  • Bake 20 minutes, then flip and bake 10 minutes. Flip each fry individually to make sure it crisps up on both sides. This bake time is perfect for the 3/8-inch cut fry, but you may need to adjust based on how even you cut them and your specific oven.

  • 2 large russet potatoes (1 1/2  to 1 3/4 pounds)*
  • 2 tablespoons olive oil
  • ½ teaspoon smoked paprika

  • ½ teaspoon Old Bay seasoning (purchased or homemade)
  • ¼ teaspoon ground black pepper
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
  2. Meanwhile, cut the potatoes into fries: (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
  3. Soak in cold water (10 minutes): Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
  4. Season the fries: Add the fries to a dry bowl and toss them with the olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.
  5. Bake: Bake the fries for 20 minutes. Take them out of the oven and carefully flip each fry. Return to oven (reversing the pans on top and bottom racks). Bake additional 8 to 10 minutes until they are crisp and golden brown, watching carefully as the bake time depends on the fry thickness and your oven. (If the majority of the fries seem soft, continue to bake a few more minutes.)
  6. Taste and add a few more pinches salt if desired. Serve immediately for the best texture and flavor.

Notes

*This makes a good amount of fries, but much less than a restaurant portion (that’s as intended!). The largest quantity of fries that fits on two baking sheets is 2 pounds, you can increase to that much if desired (adjust seasonings accordingly).

Here’s a tasty dip with a party vibe: Texas caviar (aka Cowboy caviar)! This Tex Mex combination of black eyed peas, colorful vegetables, and zingy vinaigrette dressing is a total crowd pleaser, as a chip dip or healthy side dish.

It was invented in Texas and then spread all over the US. Our spin on this party dip always has friends gathered around the bowl at our house and for good reason—it’s just that irresistible!

Just like a good potato salad, everyone has their own spin on the ingredients in Texas caviar. The common denominator: black eyed peas are a must! From there, there are all sorts of variations on the vegetables and dressing. Here are the essential fresh ingredients you need:

  • Black eyed peas, canned or cooked (see below)
  • Black beans, canned or cooked
  • Corn
  • Red bell pepper
  • Cherry tomatoes
  • Green onions
  • Jalapeno pepper
  • Cilantro

Why is it called Texas caviar?

If you’re like us, you might wonder: how did this dip get its name? (We love a good origin story.) While many people call it Cowboy caviar, it’s a nickname for Texas caviar. Turns out, the colorful dip was invented in Texas in 1940 by a woman named Helen Corbitt. She first served it on New Year’s Eve at a country club, possibly using black eyed peas because they’re known as lucky New Year’s Eve food.

It caught on and when she later served it at a Texas hotel, it was dubbed “Texas caviar” because of it’s similarity to the look of real caviar, a fancy appetizer made with fish roe. The name stuck and it’s been used ever since!

Let’s talk Cowboy caviar dressing. A common spin on this recipe uses store-bought Italian dressing, but it’s much tastier with homemade! The dressing is simple to whip up using just a few ingredients you’ll likely already have in your pantry and spice drawer. Here’s what’s in this Texas caviar dressing:

  • Lime juice
  • Apple cider vinegar
  • Sugar
  • Spices: Garlic powder, cumin, and oregano
  • Olive oil

A bit about black eyed peas

Black eyed peas are not really not peas at all: they’re beans! Black eyed peas are part of the legume family with black beans and chickpeas. While they’re often eaten in the American South, are eaten all over the world.

One of the most popular black eyed peas recipes in the US is as a lucky New Year’s Day tradition: Hoppin’ John, a dish with rice and pork. But there are so many other ways to serve them, like Texas caviar! A few of our other favorites as black eyed pea salad or as a side dish.

For Texas caviar, we like using canned black eyed peas because they’re quick and easy! They also have a pleasantly soft texture that easily soaks up the dressing. But some stores don’t carry them (at least where we live!), so you also can cook your black eyed peas from dry. Here’s what to do:

  • Place ½ pound dried black eyed peas in a large pot with 2 cups vegetable broth, 2 cups water and ¾ teaspoon kosher salt. (Or, cook the entire pound and double these ingredients! Use leftovers for another recipe or a double batch.)
  • Cook 40 to 50 minutes until they’re tender but still hold together, then drain.

  3. Add all the vegetables and beans to a bowl. Mix with the kosher salt.
  4. In a medium bowl, whisk together the vinegar, sugar, garlic powder, and cumin. Gradually whisk in the olive oil. Pour the dressing over the vegetables and mix to combine.
  5. Eat immediately, or refrigerate until serving (it tastes even better after allowing to marinade 30 minutes or longer). Serve with chips for dipping. Stores refrigerated for up to 3 days.

It takes no time at all to whip up and is beyond tasty, coating the thin chicken cutlets in a light breading with savory spices. Throw it in a skillet and pan fry until golden, and there’s something both nostalgic and sophisticated about this simple meal. Chicken cutlets is our favorite way to pan fry chicken. Slicing a chicken breast in half (or “butterflying” the breast) does two things: it results in a beautifully browned cutlet with tender, juicy interior, and it makes for a quicker cooking time! With the light breading in this recipe, it comes together into restaurant-quality flavor in minutes. Here’s what you’ll need:

  • Chicken cutlets (or chicken breast): Look for chicken cutlets or boneless skinless chicken breast, and buy organic chicken if at all possible. If you’ve made our other chicken recipes, you’ll know you can butterfly the chicken first if you buy breasts.
  • Olive oil: Olive oil is our cooking oil of choice for chicken, but you can use any neutral oil or even melted butter.
  • Spices: A custom blend of garlic powder, onion powder, smoked paprika, and dried oregano infuse major savory flavor to the chicken breasts.
  • Flour: Just a bit of flour helps to coat the exterior and make it lightly crispy. (Don’t expect it to be extremely crispy: it’s not deep fried!) Substitute gluten-free flour if desired.

How to make chicken cutlets (aka butterfly)

If you start with a chicken breast for this recipe, you can make chicken cutlets by butterflying the chicken yourself. It’s quick and simple, and it makes a huge difference when it comes to cooking chicken. Here’s what to do to butterfly a chicken breast:

Step 1 Slice the chicken breast in half.

Step 1: Place your hand over the top of the chicken breast. Use a sharp knife to carefully slice the breast horizontally, leaving the edge intact so it can open up like a book.

Step 2 Unfold the breast and separate.

Step 2: Unfold the chicken breast, then cut along the fold to separate the two halves (each half is a cutlet).

Step 3 Pound to an event thickness with a heavy pan or mallet.

Ingredients

  • ½ cup all-purpose flour (or gluten-free flour)
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 pound chicken cutlets (or 2 chicken breasts, butterflied to make 4 cutlets; see Notes)
  • 1 teaspoon kosher salt
  • 3 tablespoons olive oil

Instructions

  1. In a shallow bowl, stir together the flour, smoked paprika, garlic powder, onion powder and oregano. Pat the chicken dry with a paper towel and sprinkle both sides with the kosher salt. Dredge both sides of the chicken cutlets into the flour mixture.
  2. In a medium skillet, heat the olive oil over medium high heat. Cook the chicken for 2 to 3 minutes per side, turning with tongs, until browned and the internal temperature reaches 165°F [75°C] when measured at the thickest point. Remove the cutlets to a plate. Rest 5 minutes, then serve. Leftovers store up to 3 days refrigerated.

Basic steps for Instant Pot wild rice soup

This wild rice soup recipe is a bit different than most, since it’s made in a pressure cooker not the stovetop! Also, we decided to create this wild rice soup without using meat or dairy, so it’s naturally creamy. We’ve made lots of Instant Pot soup recipes, but this one remains a favorite!

  • First, you’ll use the Sauté mode on the Instant Pot. Sauté up the onion, celery, carrot, garlic, and mushrooms, then add the remainder of the ingredients and pressure cook.
  • While the soup is cooking, you’ll soak some cashews.
  • Once the soup is done, you’ll blend together the cashews with some of the soup and some dried sage to create a naturally creamy base without cream.

Why make Instant Pot soup?

The advantage of cooking this soup in an Instant Pot instead of the stovetop is that it’s totally hands off once the cooking starts. You can throw the soup in the pot and then go do other things, until your dinner is done! Because this recipe takes over 1 hour to make, we made the serving size large: it serves about 8. That way, you can have plenty for leftovers.

Tips for making soup with dried beans

For this wild rice soup recipe, we’ve used dried white beans in the Instant Pot. In a normal stovetop soup recipe, you would typically use canned or already cooked beans and add them to the soup.

Because the wild rice takes so long to cook already, we decided to add dried white beans to this soup recipe. They’re cheaper and taste even better than canned, and they also add a filling protein to the soup. Keep in mind that that you may need a few extra minutes on the cook time if the beans are not fully tender after the timing in the recipe below.

Ingredients

  • ½ cup raw or roasted cashews*
  • 1 medium yellow onion
  • 2 celery ribs
  • 4 medium carrots
  • 8 ounces baby bella mushrooms
  • 6 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 2 tablespoons dried oregano
  • 8 cups vegetable broth
  • 1 cup wild rice (not a wild rice blend)
  • 1 cup dried great northern white beans (not canned! The Instant Pot will cook the dry beans)
  • 2 ½ teaspoons kosher salt, divided
  • ½ teaspoon black pepper
  • 2 teaspoons dried sage
  • 1 tablespoon soy sauce, tamari, or liquid aminos

Instructions

  1. Place the cashews in a bowl and cover them with water. Leave them to soak while you make the recipe.
  2. Dice the onion. Thinly slice the celery. Cut the carrot into rounds. Slice the mushrooms. Mince the garlic.
  3. Add the olive oil to the Instant Pot and turn on Saute mode. Add the onion, celery and carrot and cook, stirring occasionally for 5 minutes until lightly browned. Add mushrooms and saute for 2 minutes. Add garlic, thyme and oregano and stir for 2 minutes.
  4. Add the broth, wild rice, dried white beans, 2 teaspoons kosher salt, and black pepper. Lock the lid of the Instant Pot. Place the pressure release handle (vent) in the “Sealing” position.
  5. Cook on High Pressure for 45 minutes: Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time. Note that it takes about 5 to 10 minutes for the pot to “preheat” and come up to pressure before it starts cooking. (During cooking, avoid touching the metal part of the lid.)
  6. Quick release: Vent the remaining steam from the Instant Pot by moving the pressure release handle to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. Open the pressure cooker lid. Taste a bean to see if it is tender (bean brands can vary). If not, cook on High Pressure for another 5 minutes and do a quick release.
  7. Using a liquid measuring cup, carefully remove 2 cups of the hot soup (including the broth, veggies and rice) to a blender. Drain the cashews and add them to the blender with the dried sage. Blend on high for about 1 minute until creamy. Then pour back into the soup.
  8. Add ½ teaspoon kosher salt and the soy sauce. Taste, and adjust seasonings as desired. Garnish with a drizzle of olive oil and fresh ground pepper.

Notes

*If you use roasted salted cashews, omit the soy sauce at the end; then add it to taste. If you have a cashew allergy, try using the same amount of whole milk or cream to make a creamy base.

The secrets behind honey garlic shrimp—in 10 minutes

There’s no marinating time needed with this honey garlic shrimp. It’s the ultimate fast and easy dinner idea that comes together in just 10 minutes! Here are a few of the secrets to this kitchen magic trick (or jump to the recipe below):

  • Mix the shrimp with minced garlic, onion powder, and salt. This allows maximum coverage of the seasoning on the shrimp first.
  • Mix together a quick sauce. Honey, soy sauce, and rice vinegar is all you need!
  • Sauté 1 to 2 minutes per side. It’s perfectly seared, just like our popular sautéed shrimp.
  • Turn off the heat and add the sauce! Removing the heat is important so the sauce doesn’t evaporate when it hits the hot pan. Stir until everything is fully coated in glossy sauce.

The best shrimp to buy

When you’re shopping for shrimp, there are so many options at the store. If you’re making this honey garlic shrimp, here’s what we’d recommend:

  • Find medium shrimp (or large). Medium is nice because you get more bites! Medium is also labeled as 41 to 50 count, and Large as 31 to 40 count (which indicates how many shrimp there are per pound).
  • Use tail on or peeled. Tail on looks nice, but you do have to remove the tails as you eat them! Peeled shrimp is helpful if desired.
  • Buy fresh or frozen. Both are essentially the same freshness because most shrimp are immediately flash frozen when caught. Just make sure to thaw the shrimp in advance.
  • Look for wild caught. Fish that is wild caught in your country is usually a sustainable choice. There are also quality options in well-regulated farms; see Seafood Watch Consumer Guide.

How to thaw shrimp

What’s the best way to thaw shrimp? The easiest way is to remember to place it in the refrigerator the night before! But if you’re like us and rarely think ahead, there’s a quick method too. Here’s the best way to thaw shrimp:

  • Day before: Place the frozen shrimp in the refrigerator overnight.
  • Day of: Place the frozen shrimp in a large bowl with very cold water. Stir the bowl every 5 minutes to break up clumps of shrimp that freeze together. The shrimp should defrost in about 15 minutes. Make sure to pat it dry before using!

Ways to serve honey garlic shrimp

Just mix a handful of simple ingredients together, and you’ve got an instant homemade snack that’s so much more delicious than store-bought granola bars or energy bites. Even better, they’ve got a good amount of protein and fiber for a tiny ball. We think they’re pretty darn perfect.

These peanut butter oatmeal balls are full of simple ingredients you might already have on hand—which is very intentional on our part! Years ago, we used to make energy ball recipes with trendy Medjool dates, a large variety of date with a sticky sweet, caramel flavor. We love them, but they can be hard at the grocery and very expensive. Also, I made so many I burned Alex out on Medjool date recipes (oops!).

These days, we like our energy balls recipes made with ingredients we always stock in our pantry. They’re beyond easy—and kids love to make them too! Here’s what you’ll need for these peanut butter oatmeal balls:

  • Old Fashioned rolled oats
  • Creamy peanut butter: no sugar added! Use sunflower butter for nut free
  • Honey: substitute agave syrup for vegan
  • Cinnamon
  • Vanilla or chocolate protein powder
  • Mini chocolate chips

Tips for rolling peanut butter oatmeal balls

This energy balls recipe could not be easier: all you have to do is mix together the ingredients and roll them up! It’s that simple. Want them to look as beautifully uniform as the oatmeal balls in the photo? Here are a few tips on rolling these energy bites:

  • Freeze the dough 5 minutes before you roll. Just a few minutes in the freezer firms up the texture so it’s easy to roll.
  • Use a cookie scoop (1 1/2-inch or #40). This is the magic behind making them look so uniform! A cookie scoop is perfect for proportioning out the dough. You can still make the recipe without one.
  • Use mini chocolate chips. Using mini chocolate chips helps the entire texture to stick together well: large chips can cause fractures in the dough.

Use any nut butter you like

These don’t have to be peanut butter oatmeal balls, of course. You can use any nut butter you like: almond butter, cashew butter, walnut butter pecan butter, pistachio butter, or sunflower butter for nut-free! Here are a few notes if you use a different nut butter:

  • Make sure to use a creamy nut butter. You’ll want a nut butter with a nice creamy texture that will make the energy balls stick together.
  • You can use homemade, but be aware of texture. You can use homemade nut butter, but be aware: some homemade versions can be very dry.
  • If it’s too dry, add a little more honey or a few tablespoons milk. If you can’t get the balls to stick together, it’s ok: all nut butters have a different consistency. Just add a little more honey or your milk of choice (dairy or non dairy) until the dough is able to stick together.

Are these a healthy snack?

These peanut butter energy balls come out so much more delicious than a store-bought granola bar. You can get a decent amount of protein in a few balls (which would equal 1 store-bought energy bar). Here are the particulars:

  • Protein: Each energy bite has 3 grams of protein of 6% of your daily need.
  • Fiber: Each energy ball has 1 gram of fiber or 5% of your daily need.
  • Fat: Each energy bite has 4 grams of fat or 5% of your daily allotment.
  • Calories: Each ball has 100 calories.

Of course when it comes to healthy snacks, carrot sticks or a handful of almonds are the healthiest. But if you’re looking for something irresistibly tasty and a little sweet, these energy balls are perfect.

How to choose a protein powder brand

Here at A Couple Cooks we don’t often include protein powder in our recipes. But for these peanut butter oatmeal balls we wanted to maximize the overall protein content! If you prefer, you can definitely omit it without sacrificing flavor. Alex did a little research into how to find healthy protein powder; here’s what we found:

Energy ball flavor variations

There are so many ways to mix up this energy balls recipe! As we’ve mentioned above, no need to make them peanut butter oatmeal balls, though that’s our favorite way. Here are a few ideas on how to vary the flavors:

  • Chocolate peanut butter: Go to No Bake Energy Bites.
  • Almond joy: Use almond butter instead of peanut butter and add ¼ cup shredded coconut (so delicious!). Remember if your almond butter has a dry texture, add a little more honey or a few tablespoons milk until the dough comes together.
  • Birthday cake: Add ¼ teaspoon almond extract and 3 tablespoons all natural sprinkles.
  • Cherry vanilla: Substitute dried cherries for the chocolate chips (roughly chopped) and ½ teaspoon vanilla extract.
  • Blueberry lemon: Substitute dried blueberries for the chocolate chips and add ½ teaspoon lemon zest.

Ingredients

  • 2 cups Old Fashioned rolled oats
  • ½ cup creamy peanut butter (no sugar added, or any nut butter or sunflower butter for nut free)
  • ⅓ cup honey (or agave syrup for vegan)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cinnamon
  • ¼ cup vanilla or chocolate protein powder (optional; we use this one)*
  • 3 tablespoons mini chocolate chips

Instructions

  1. Mix all ingredients together in a bowl. Freeze the bowl for 5 minutes. 
  2. Roll the dough into 20 small balls, pressing the dough together with your hands. We used a 1 1/2-inch cookie scoop (#40) to make uniform balls. You can also make smaller balls if desired. (If the texture of your nut butter makes the dough very dry, add a little more honey or a few tablespoons milk of choice until you can press it together into a ball shape.) Refrigerate for up to 2 weeks. Enjoy!

Notes

*If you prefer, you can omit the protein powder from this recipe and still have a delicious snack. You can also add natural foods like chia seeds or ground flax seeds (2 tablespoons of each has 4 grams protein).
