If there’s one Italian food we’re head over heels for, it’s gnocchi—those pillowy balls of dough that are considered “pasta” but should be in some other category of their own! Here’s our latest creation with our favorite ingredient: this baked gnocchi recipe.

The gnocchi baked up in a tangy marinara sauce and layered with goat cheese and burrata (or fresh mozzarella). You don’t even have to boil the gnocchi—just throw it in the pan and bake! It’s so simple and everyone we’ve served it to adores it. It makes a big pan that’s great for entertaining, perfect as a main dish or side dish for dinner parties or a Christmas recipe—and it works just as well for weeknight dinners.

Ingredient notes for baked gnocchi

This baked gnocchi recipe is extremely simple—as we mentioned, you don’t even have to boil the gnocchi! It cooks right up in the sauce while it’s baking. Here are a few ingredient notes for this recipe:

  • Packaged gnocchi: This recipe is for packaged dried gnocchi; do not use homemade gnocchi as the texture may not hold up.
  • Marinara sauce, fennel, garlic, oregano and basil: This is our trick to make marinara sauce taste homemade: simmer it with a few extra herbs and spices before baking.
  • Goat cheese (chevre): This adds a creamy body and irresistible tangy flavor to the sauce. The way it melds into the sauce will please everyone, even people who don’t think they like goat cheese.
  • Burrata cheese (or fresh mozzarella): Burrata is a fresh Italian cheese filled with cream; it’s a gourmet ingredient that’s now easy to find at your local grocery (packaged and sold in water). It adds huge flavor to the dish! You can also use fresh mozzarella.

Tips for using burrata cheese

Burrata is an Italian fresh mozzarella cheese with a surprise inside: the center is filled with cream! The creamy interior also contains cheese shreds, called straciatella. This cheese originated in Southern Italy and is now served all over the world.

This recipe calls for only 1 ball of burrata. It used to be only sold in 2-ball packages, but lately we’ve found you can buy 1 ball packaged separately! It’s a nice way to save a little money. Or, you can use the extra ball in burrata recipes like burrata salad or a burrata sandwich.

Customize by adding protein or greens

This baked gnocchi recipe is a delicious vegetarian main dish or side dish as is. To add even more protein, you can also add 1 pound cooked ground sausage, beef or chicken to the pan with the gnocchi and bake for added protein.

Another idea is adding greens: add a few handfuls of baby or chopped spinach to the marinara sauce and allow it to wilt before adding the gnocchi and baking.

Storing leftovers

This baked gnocchi recipe is best when it’s freshly baked, since the gnocchi is the most soft and pillowy! However, leftovers can be stored up to 3 days refrigerated and still taste great. Make sure to reheat gently on the stovetop or in the microwave (you can also reheat in the oven).

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon fennel seeds
  • 24-ounce jar quality marinara sauce
  • 1 teaspoon dried oregano
  • 1 handful fresh basil, roughly chopped, plus more for garnish
  • ½ teaspoon kosher salt
  • 2 16-ounce packages gnocchi
  • 4 ounces goat cheese (chevre)
  • 4-oz ball burrata cheese (optional; or fresh mozzarella), torn

Instructions

  1. Preheat the oven to 400°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and fennel seeds and cook for 1 minute. Add the marinara sauce, oregano, basil, and salt. Stir in half the goat cheese. Heat for 1 minute. Add the gnocchi (uncooked) and stir until combined.
  3. Pour the mixture into a medium baking dish (about 7 x 11”). Top with dollops of the remaining goat cheese and add the burrata or mozzarella, tearing it into 1-inch chunks. 
  4. Bake until the gnocchi is tender and the cheese is melted, about 25 minutes. If desired, broil to brown the cheese (about 2 minutes or so). Garnish with more chopped fresh basil and serve. 

Notes

If desired, you can add 1 pound cooked ground sausage, beef or chicken to the pan with the gnocchi and bake for added protein. Or, add a few handfuls of baby or chopped spinach to the marinara sauce and allow it to wilt before adding the gnocchi and baking.

These thin potato rounds are browned in a skillet until they’re crispy and golden. The seasoning is perfect: just the right amount of smoky, salty, and savory. They work as breakfast potatoes, or an easy side dish for dinner. Here’s how to make them!

Ingredients for fried potatoes

What we love about fried potatoes: they’re simple, humble, and quick! No need to wait for an oven to preheat like with roasted potatoes. We love using them for dinners where you’ve got something roasting in the oven already, or as breakfast potatoes for a fancy brunch. Here’s what you’ll need:

  • Yellow or red potatoes: A waxy potato works best here. Avoid russet potatoes (aka starchy potatoes), which are better for mashed potatoes or baked potatoes.
  • Butter and olive oil: Using a combination of fats adds complexity and nuance to the flavor: you can taste the difference! The butter is savory and rich, and the olive oil adds a subtle nuttiness. We started using butter and olive oil in a combination years ago, and we love pulling out this trick to make things taste incredible. For vegan, substitute the butter with more olive oil or vegan butter.
  • Smoked paprika, garlic powder, thyme, and salt: This combination of spices makes a deliciously savory flavor.

Smoked paprika is key

Smoked paprika is a must in these fried potatoes, if you can find it! It’s a Spanish version of paprika that adds a smoky flavor without heat or spice! It’s made up of dried pimiento peppers that that are smoked over a fire, then ground. You can find smoked paprika in the spice aisle in most grocery stores. You can also buy it online here!

  • Smoked paprika may be labeled as any of the following: pimentón, Spanish smoked paprika or sweet smoked paprika.
  • Avoid hot smoked paprika: it’s too spicy and not interchangeable.
  • If you can’t find it, substitute standard paprika, sometimes called sweet paprika or Hungarian paprika.

Use any skillet, like non-stick or cast iron

You can use any type of skillet to make these fried potatoes! It’s easier to use a non-stick skillet, though of course a cast-iron skillet feels more sturdy and rustic. If you’re using cast iron or aluminum, make sure that potatoes are fully browned before you flip them. When they brown, they release better from the pan.

Did you know you can make the best fries of your life—homemade? Yes, we’re pretty confident that these seasoned fries will blow you away! For years, Alex and I have been perfecting the art of homemade French fries and we’ve picked up some tips to getting the very best fries possible.

They do take a bit of time! But if you have to work for your food, it makes it that much more special: right? These are baked in an oven until crispy and coated in the perfect seasoning blend. Ready to become a French fries expert?

Ingredients for seasoned fries

First up: let’s talk French fry seasoning. We’ve tinkered with a whole lot of seasoning blends, and come up with this one. It brings out the best savory, salty flavor in your fries. Here’s what you’ll need:

  • Smoked paprika: This is the Spanish version of paprika that’s made with smoked peppers. It infuses a hint of smokiness into each bite. (There are lots of smoked paprika recipes to use up a jar.)
  • Old Bay: Old Bay is a seasoning blend from the American East Coast: it’s often used to season seafood and potatoes. It brings a savory, irresistible flavor to each bit. Look for Old Bay in the spices aisle in the grocery or buy it online. You can also make homemade Old Bay seasoning.
  • Garlic powder: Garlic powder adds just the right savory flavor.

How to cut seasoned fries: by hand

Once you’ve compiled your spices, you’ve got to cut the fries! You can cut seasoned fries two ways: by hand or with a French fry cutter. We make fries so often that we got a special cutter (below). But you can easily cut them by hand! Here’s our fast and easy method (or watch this video):

  • Slice off the ends of each potato, then slice off part of the side to make a base.
  • Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long 3/8-inch wide strips.
  • Repeat until all potatoes have been cut into fries!

Or, use a French fry cutter!

Here’s an option only if you think you’ll make fries a lot: a French fry cutter! Typically Alex and I don’t recommend one-use gadgets. But this one is so slick, we couldn’t resist. A French fry cutter cuts fries from a potato in 1 second! (Really.) It’s easy to use and pumps them out in a jiffy. The only downside: finding storage space for a one-use gadget. Here’s a link to the French fry cutter we use.

Secret to the best seasoned fries: a 10-minute soak

Here’s what you need to do to make the very best seasoned fries: soak them in cold water for 10 minutes. Now, some recipes call for soaking fries for up to 1 hour or more, or even boiling them first. But after lots of tests, we found you only need 10 minutes in cold water! Here’s why:

  • It makes the outside crispy and inside tender. There’s a notable difference when you soak before you bake.
  • You can soak while your oven preheats! Here’s the thing: you don’t lose any time because you can do it while the oven is preheating. Ideally you can cut, soak and season the fries before the oven is ready to go.

Bake in the oven until crispy

Here’s another nice thing about these seasoned fries: they’re baked, not fried! That makes them a healthy seasoned fries option (more on that, below). You’ll cook at high temperature (425 degrees) to get just the right golden exterior. There are only a few tricks to getting them perfectly crisp. Here’s what to know:

  • Space out the oven racks. Make sure your oven racks are evenly spaced for the most even cooking. You’ll also want to reverse the trays in the oven after you pull them out to flip.
  • Spread the fries in an even layer. Having air between each fry is very important to getting them crispy. If you overcrowd the tray, you’ll get soggy fries.
  • Bake 20 minutes, then flip and bake 10 minutes. Flip each fry individually to make sure it crisps up on both sides. This bake time is perfect for the 3/8-inch cut fry, but you may need to adjust based on how even you cut them and your specific oven.

Once your fries are done: let’s get to the dipping! There are so many great sauces to use for dipping these tasty fries. Here are some great options:

  • 2 large russet potatoes (1 1/2  to 1 3/4 pounds)*
  • 2 tablespoons olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon Old Bay seasoning (purchased or homemade)
  • ¼ teaspoon ground black pepper
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
  2. Meanwhile, cut the potatoes into fries: (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
  3. Soak in cold water (10 minutes): Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
  4. Season the fries: Add the fries to a dry bowl and toss them with the olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.
  5. Bake: Bake the fries for 20 minutes. Take them out of the oven and carefully flip each fry. Return to oven (reversing the pans on top and bottom racks). Bake additional 8 to 10 minutes until they are crisp and golden brown, watching carefully as the bake time depends on the fry thickness and your oven. (If the majority of the fries seem soft, continue to bake a few more minutes.)
  6. Taste and add a few more pinches salt if desired. Serve immediately for the best texture and flavor.

Notes

*This makes a good amount of fries, but much less than a restaurant portion (that’s as intended!). The largest quantity of fries that fits on two baking sheets is 2 pounds, you can increase to that much if desired (adjust seasonings accordingly).

Here’s a tasty dip with a party vibe: Texas caviar (aka Cowboy caviar)! This Tex Mex combination of black eyed peas, colorful vegetables, and zingy vinaigrette dressing is a total crowd pleaser, as a chip dip or healthy side dish.

It was invented in Texas and then spread all over the US. Our spin on this party dip always has friends gathered around the bowl at our house and for good reason—it’s just that irresistible!

Just like a good potato salad, everyone has their own spin on the ingredients in Texas caviar. The common denominator: black eyed peas are a must! From there, there are all sorts of variations on the vegetables and dressing. Here are the essential fresh ingredients you need:

  • Black eyed peas, canned or cooked (see below)
  • Black beans, canned or cooked
  • Corn
  • Red bell pepper
  • Cherry tomatoes
  • Green onions
  • Jalapeno pepper
  • Cilantro

Why is it called Texas caviar?

If you’re like us, you might wonder: how did this dip get its name? (We love a good origin story.) While many people call it Cowboy caviar, it’s a nickname for Texas caviar. Turns out, the colorful dip was invented in Texas in 1940 by a woman named Helen Corbitt. She first served it on New Year’s Eve at a country club, possibly using black eyed peas because they’re known as lucky New Year’s Eve food.

It caught on and when she later served it at a Texas hotel, it was dubbed “Texas caviar” because of it’s similarity to the look of real caviar, a fancy appetizer made with fish roe. The name stuck and it’s been used ever since!

Let’s talk Cowboy caviar dressing. A common spin on this recipe uses store-bought Italian dressing, but it’s much tastier with homemade! The dressing is simple to whip up using just a few ingredients you’ll likely already have in your pantry and spice drawer. Here’s what’s in this Texas caviar dressing:

  • Lime juice
  • Apple cider vinegar
  • Sugar
  • Spices: Garlic powder, cumin, and oregano
  • Olive oil

A bit about black eyed peas

Black eyed peas are not really not peas at all: they’re beans! Black eyed peas are part of the legume family with black beans and chickpeas. While they’re often eaten in the American South, are eaten all over the world.

One of the most popular black eyed peas recipes in the US is as a lucky New Year’s Day tradition: Hoppin’ John, a dish with rice and pork. But there are so many other ways to serve them, like Texas caviar! A few of our other favorites as black eyed pea salad or as a side dish.

Canned vs cooked black eyed peas

For Texas caviar, we like using canned black eyed peas because they’re quick and easy! They also have a pleasantly soft texture that easily soaks up the dressing. But some stores don’t carry them (at least where we live!), so you also can cook your black eyed peas from dry. Here’s what to do:

  • Place ½ pound dried black eyed peas in a large pot with 2 cups vegetable broth, 2 cups water and ¾ teaspoon kosher salt. (Or, cook the entire pound and double these ingredients! Use leftovers for another recipe or a double batch.)
  • Cook 40 to 50 minutes until they’re tender but still hold together, then drain.

For the vegetables

  • 2 15-ounce cans black eyed peas (or 3 cups cooked)

For the dressing

Instructions

  1. Drain and rinse the beans and corn.
  2. Dice the bell pepper. Chop the cherry tomatoes. Thinly slice the green onions. Seed and dice the jalapeno pepper. Chop the cilantro.
  3. Add all the vegetables and beans to a bowl. Mix with the kosher salt.
  4. In a medium bowl, whisk together the vinegar, sugar, garlic powder, and cumin. Gradually whisk in the olive oil. Pour the dressing over the vegetables and mix to combine.
  5. Eat immediately, or refrigerate until serving (it tastes even better after allowing to marinade 30 minutes or longer). Serve with chips for dipping. Stores refrigerated for up to 3 days.

If there’s one vegetable that’s always a winner in our house, it’s broccoli. Surprisingly, there’s a quick method that has become our go-to: boiled broccoli!

Salted and seasoned with olive oil and a spritz of lemon, it’s a favorite of the whole family (our kids actually even request it—no kidding!). The florets come out perfectly bright green and crisp tender after just 2 minutes in hot water. Here’s exactly how to boil broccoli!

How to make boiled broccoli

This is one the easiest methods of how to cook broccoli, because there’s really no technique involved. The only thing to remember is very important: don’t overcook the broccoli! Even just a minute longer in that boiling water and it will become yellow brown mush. Here’s exactly what to do (or jump to the recipe):

  • Bring a pot of water to a boil.
  • Chop the broccoli by cutting it into medium-sized florets, keeping the stems long.
  • Boil the broccoli for 2 ½ to 3 minutes, until crisp tender and bright green. Taste test and immediately stop cooking once the broccoli done.
  • Drain the florets in a colander.
  • Mix in olive oil, lemon juice (optional) and kosher salt. Give it a taste: perfect boiled broccoli!

What is blanching?

Is this blanched broccoli? Well, almost! Blanching is a cooking method that involves boiling vegetables until they’re crisp tender, then plunging them into ice water to stop the cooking process.

This boiled broccoli recipe technically isn’t blanching because it doesn’t use ice water. The ice water is used to keep the veggies as colorful as possible. You’ll notice that this recipe is beautifully bright green, but leftovers can become more yellow in color depending on how long you boil them.

The best way to chop broccoli

One final tip for boiled broccoli: a nice way to cut it is to keep the stems as long as possible, which makes for the best look on the plate. If you cut the stems short and stubby, you’ll end up with tiny florets that make a mess on the plate and look less than appetizing. Here’s how to chop broccoli so it looks the best:

  • Keep the stems as long as possible. When you chop the floret, cut it at the base of where the floret attaches to the main stem. This makes for the best shape.
  • Make the florets medium sized, as similar in size as possible. It doesn’t have to be perfect, but keeping the florets similar sized helps them to cook at the same rate.

Ways to season boiled broccoli

The key to great-tasting boiled broccoli: the seasonings! First and foremost, make sure to salt it perfectly to taste, using the recipe below as a guide. If you’re looking for some adders, here are some tasty ways to take it over the top:

  • Feta cheese or goat cheese crumbles
  • Shredded Parmesan or Pecorino Romano cheese
  • A shake or two of rice vinegar, soy sauce, and a sprinkle of sesame seeds

During corn season, we’ve been buying a lot of corn from the farmers market and we’ve been looking for creative ways to cook it “outside the cob.” Enter skillet corn! Just a few ingredients come together to make beautiful sweet corn magic. Cook corn in a skillet with seasonings and it’s ready in just 5 minutes. Because it’s such a simple recipe, you’ll need each one of these ingredients: no substitutes! Here’s what’s in skillet corn:

  • Fresh sweet corn (or frozen or canned corn; see notes!)
  • Salted butter
  • Garlic
  • Smoked paprika
  • Onion powder
  • Salt
  • Fresh sage and/or parsley (optional)
How to cut corn off of cob

Tips for cutting corn off the cob

The only part of skillet corn that requires technique is cutting corn off the cob. This is a notoriously tedious process that often ends with kernels all over the floor (it always happens to us!) Here are a few of our favorite mess-free methods for cutting corn:

  • Bundt pan method: Place the corn cob right on top of the raised center part of a Bundt pan. When you slice downward, the Bundt pan catches all the corn kernels! Go to How to Cut Corn Off the Cob.
  • Inverted small bowl inside larger bowl: You can also use an inverted small bowl inside a larger bowl to catch the kernels (here’s a video).
  • Mandoline: If you have a mandoline, you can use it to cut corn off the cob. It slides right off without making a mess!

Tips for making skillet fried corn

This skillet corn recipe is very simple. Here are a few things to keep in mind as you prep for the recipe (or scroll down to the recipe):

  • Use the smoked paprika: no substitutions! Smoked paprika Spanish version of paprika made of dried pimiento peppers that that are smoked over a fire, then ground. It adds a smoky flavor to this dish that’s irreplaceable. When shopping for it, you may find it labeled as pimentón, Spanish smoked paprika or sweet smoked paprika.
  • Cook for just 5 minutes. All you need is a few minutes to get the corn bright golden and tender.
  • Fresh sage is optional, but adds flavor intrigue. We happened to have some fresh sage on hand in our garden, and adding a few whole leaves imparts an interesting complexity. You can remove it prior to serving!

Variation: use frozen or canned corn

You can also use frozen or canned corn for this skillet fried corn, though it’s tastiest with fresh corn.

  • Frozen corn can be swapped in without any changes. It won’t taste quite as good as fresh sweet corn, but it still tastes delicious!
  • Canned corn works, but needs some modifications. Use 2 15-ounce cans, drained. Decrease the salt to starting with ¼ teaspoon kosher salt, then add more to taste (since canned corn has added sugar and salt).

  • Panko is a Japanese-style breadcrumb mixture that is airier and lighter than traditional breadcrumbs. It has a crunchy texture which is more satisfying on salads (breadcrumbs are much finer with almost a sand-like texture).
  • “Italian” means herbs and salt are added. You should be able to find Italian panko or panko easily at your local grocery store.
  • Only have plain panko? Mix ½ cup panko with ⅛ teaspoon kosher salt and ½ tablespoon Italian seasoning (or 1 teaspoon dried oregano and ¼ teaspoon each dried basil and thyme).

Are you a yellow squash fan? Here’s one of the best and easiest ways to cook this bright vegetable: roasted yellow squash! Pop the rounds in the oven with Italian herbs and Parmesan cheese and roast them until tender—a hands-off method that cooks this veggie like a charm.

When Alex and I yellow squash, this is our preferred method! (Except for this tasty casserole, when we have time. Oh and grilled.) Here are the tricks to the bake time and seasoning roasted summer squash to perfection.

How to make roasted yellow squash

Yellow squash roasts up in just 20 minutes in a hot oven! It’s very easy to do, and you likely don’t even need a recipe. Here’s the outline of the steps, or you can jump right to the recipe below:

  • Slice into ¼ inch-thick slices. This width is just right for tender bites of yellow squash. It takes longer to roast if you cut it thicker…and it’s not as tasty.
  • Roast about 20 minutes at 425 degrees Fahrenheit: just until tender! You don’t want to overcook summer squash, or it tastes limp and stringy.
  • Add the Parmesan cheese at the 8 minute mark: and rotate the trays! This makes so that it doesn’t burn or become too browned in the oven. Rotating the trays is helpful for even browning.

Best seasonings for yellow squash

Here’s the thing about this summer vegetable. Yellow squash contains 95% water. So similar to zucchini, it needs quite a bit of seasoning to make it taste as delicious as possible. Pairing roasted yellow squash with Italian-style herbs brings a big punch to the flavor. Here’s what we used in this recipe:

  • Dried oregano
  • Dried basil
  • Onion powder
  • Garlic powder

  3. Line two baking sheets with parchment paper. Place the vegetables in a single layer on the baking sheets. Roast for 8 minutes.

  • Panko is a Japanese-style breadcrumb mixture that is airier and lighter than traditional breadcrumbs. It has a crunchy texture which is more satisfying on salads (breadcrumbs are much finer with almost a sand-like texture).
  • “Italian” means herbs and salt are added. You should be able to find Italian panko or panko easily at your local grocery store.
  • Only have plain panko? Mix ½ cup panko with ⅛ teaspoon kosher salt and ½ tablespoon Italian seasoning (or 1 teaspoon dried oregano and ¼ teaspoon each dried basil and thyme).

  3. Make the Parmesan dressing: whisk together the mayonnaise, Greek yogurt, grated Parmesan cheese, red wine vinegar, Dijon mustard, garlic powder, salt, black pepper and water until a creamy dressing forms.
  4. Place the butter lettuce on salad plates or a large platter. Top with the sliced tomatoes or radishes, shallot, chives, and Parmesan cheese shavings. Drizzle with about ½ cup of the dressing and sprinkle with Italian panko.

How to cook a sweet potato in the microwave

First rule to remember: The cook time depends on the size of the sweet potato. It also depends on the microwave strength and the age of the sweet potato. It will slightly vary every time! Here’s a table that shows an easy starting point. It’s best to cook one potato at a time, but you can microwave up to two potatoes at once. Why microwave a sweet potato?

Is a microwave sweet potato as good as a baked sweet potato or steamed sweet potato? Short answer: No. A microwave sweet potato slightly drier, doesn’t have the caramelized sweet flavor like a roasted potato, and the skin is less appetizing (it becomes slightly shriveled). But it’s still worth nuking your potato! It comes out beautifully tender, and it’s great quick shortcut method. A microwave sweet potato is ideal for:

  • Quick single-serving meals
  • Lunches or dinners at an office
  • When you don’t have access to an oven or stovetop

2 tricks for microwave cooking

Cooking in a microwave is tricky because it cooks food in an uneven manner. The biggest challenge to a microwave sweet potato is that it can come out dry and shriveled. After many tests, here’s what we found:

  • Prick the sweet potato all over with a fork. This prevents explosions in the microwave from the steam that escapes when cooking.
  • Wrap the potato in a wet paper towel. This helps to infuse moisture while cooking and prevent shriveling.

How to tell when it’s done

Once you’ve pricked and wrapped it, you can cook a sweet potato in the microwave! Cook it for the minutes specified in the table above, then flip and cook the same amount on the other side. When it’s done, do the following:

  • Prick it with a fork on both sides, taking care because it’s hot!
  • If the potato is tender and fork goes in with no give, it’s done. Testing both sides is the best way to make sure it’s cooked all the way through.

How many potatoes can you microwave at once?

It’s best to make one microwave sweet potato at a time for the most even cooking, but you can cook up to two at once. Want to cook more than two? Your best bet is an oven: try this Quick Baked Sweet Potato method. In our tests, we found a simple formula for how to microwave two sweet potatoes:

  • Multiply the cook time by 2. Base this on your largest potato and reference the table above. For example, if you have two large sweet potatoes, expect to cook them 8 to 10 minutes per side.
  • Start checking a few minutes before to assess doneness. Check to see if it is fork tender on both sides.

There are so many great ways to top a microwave sweet potato! Ideas depend on whether you’re eating it as a side dish or loading it up as a healthy meal. Here are some of our favorite ways to top a sweet potato:

  • Got super large Brussels sprouts? We’ve gotten some massive ones at the store. Cut them in half, then into thirds to make sixths. Very small Brussels can likely just go in half. The goal is to have everything in similar sized pieces.
  • Remember the weight for the sprouts is off the stem. It’s easiest to buy them in bags from the store: usually you can find one pound bags.

Tips for the white cheddar cheese sauce

This Brussels sprout casserole features a white cheddar cheese sauce that’s made like a traditional mac and cheese sauce using a roux. A roux (pronounced “roo“) is a way to thicken sauces by cooking equal parts flour and butter. Here are a few things to keep in mind when making the sauce:

  • Measure out your ingredients first (mise en place). The cooking process goes fast, so you don’t want to be distracted by measuring. The French way to say this is mise en place, which “means everything in its place”.
  • Don’t leave the stove, and watch closely. The flour and butter can burn easily! Stand by the stove and start adding milk right when the flour turns golden brown.
  • Add the milk gradually. Pour in the milk and constantly whisk, adding it little by little, until it forms a smooth sauce. Then add the cheese and stir until it melts.

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds Brussels sprouts, off the stem
  • 2 large shallots
  • 4 garlic cloves
  • 1 ⅛ teaspoons kosher salt, divided
  • Fresh ground black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 ¼ cups whole or 2% milk
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 cup (about 4 ounces) grated sharp white cheddar cheese
  • ½ cup Pecorino Romano cheese (or Parmesan cheese, with an extra pinch salt)

  1. Preheat: Preheat the oven to 375 degrees Fahrenheit.

Add the Brussels sprouts, 1 teaspoon kosher salt, and fresh ground black pepper and sauté on medium high heat for 3 minutes. Add ¼ cup water and continue cooking until tender and starting to brown, another 6 to 7 minutes. Remove from the heat.
  4. Meanwhile, make the cheese sauce: Grate the white cheddar cheese (if necessary). Measure out the butter, flour, milk, ⅛ teaspoon salt, onion powder, and garlic powder. In a saucepan, heat the butter over medium heat; when it melts, stir in the flour. Heat the mixture for about 2 minutes, stirring constantly. When the color starts to turn light brown, immediately reduce the heat to low. Add the milk very slowly: whisking constantly until the mixture is completely smooth before adding more. Then add the salt, onion powder, and garlic powder and continue cooking on low heat for about 2 minutes, whisking frequently. Gradually add the sharp cheddar cheese and Pecorino Romano cheese, and keep stirring until it is fully melted and the sauce is smooth.

As cookbook authors constantly in search of new flavor ideas, Alex and I created this recipe based on inspiration from a memorable meal we had in Paris. And boy, did the results deliver!

First, you’ll caramelize the carrots and beets in a hot oven—then serve them over a swoosh of garlicky yogurt sauce, sprinkled with fresh mint and pistachios (and maybe, a drizzle of honey). Of course, you don’t have to take the “fancy” serving suggestions: these roasted beets and carrots are just as good on their own! The serving suggestions make it like a restaurant-style dish. (For kids, you might want to deconstruct a little bit based on their tastes!) Here are a few things to keep in mind for this recipe:

  • Use thin carrots if possible. We were able to find long thin carrots for this recipe, which is a nice size contrast to the beets. If you can’t find them, simply slice your carrots into thinner pieces.
  • Consider rainbow carrots or golden beets. The more colors the merrier, so feel free to mix it up color-wise. Farmers markets often have even more varieties of these root vegetables, like candy stripe beets (Chioggia beets).
  • Plate just before serving. The color of the beets can bleed easily, so plate this dish immediately before serving. If you like, add a drizzle of honey to bring out the sweet flavors!

Ingredients

For the roasted beets and carrots

  • 1 pound carrots (we like using small thin carrots)
  • 1 pound beets (about 1 ½ large)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 handful pistachios, finely chopped 
  • Mint and parsley leaves, finely chopped
  • Optional: Honey, for drizzling

Yogurt sauce:

  • 1 cup plain Greek yogurt (or vegan yogurt)
  • 1 clove garlic, minced
  • 1 teaspoon finely chopped mint (optional)
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat the oven to 450°F.
  2. Clean and peel the carrots and chop into 1-inch chunks (or if using long thin carrots, slice them in half). Peel the beets, then slice them into about ¼ inch thick pieces. 
  3. Line a baking sheet with parchment paper. Place the carrots on one side and the beets on the other. Toss each side with ½ tablespoon olive oil and ½ teaspoon kosher salt
  4. Bake for about 30 to 35 minutes, until tender and browned (no need to stir). 
  5. Meanwhile, mix together the ingredients for the yogurt sauce and refrigerate. (Stores up to 1 week refrigerated). Finely chop the pistachios and mint and parsley leaves. 
  6. To serve, spread the yogurt sauce on a platter. Top with the roasted vegetables, then sprinkle with the pistachios, mint and parsley. If desired, add a drizzle of honey. Serve immediately.

  1. Cut around the pit: Stand the mango on its side, with the stem facing away from you. Using a large chef’s knife, cut around the pit on one side. Start about 1/4″ from the center, following the curve of the pit. Repeat the same cut on the other side of the pit.
  2. Use a pairing knife to score it into squares: Use a paring knife to score the mango into squares, taking care not to cut through the peel.
  3. Scoop it out with a spoon: Use a large spoon to scoop between the fruit and the peel to remove the diced mango.

  • First, sauté the broccoli in olive oil for 3 to 4 minutes. This gets it mostly cooked and a little brown.

  • 1 1/2 pounds fresh broccoli, stem on (about 3 large heads or 6 heaping cups florets)

How to make sauteed broccolini: some tips

Sauteed broccolini is quick and simple: the cooking goes fast! Once you’ve tried it once, you won’t need to follow a recipe. But for the first time, here are some tips for cooking and seasoning it to perfection:

  • Chop off the tough lower portions of the stems. Slice any very large florets in half lengthwise, which makes them easier to eat.
  • Sauté the broccolini 3 to 4 minutes in olive oil. Stir occasionally and cook until just starting to brown at the edges. At this point, the pan will be starting to get dry.
  • Add a bit of water, salt and garlic powder and cook 2 to 3 minutes. This last part of cooking gently steams the broccolini (it’s a technique we use for broccoli as well). It cooks it the rest of the way so that it’s bright green and tender.
  • Add any remaining seasonings. We like to add lemon juice at the end for a little brightness, but it’s not required!

What is broccolini, anyway?

Broccolini might look like baby broccoli: and it’s sometimes labeled that way in the produce aisle! But it’s not technically an immature version of the real thing.

Broccolini is a cross between standard broccoli and Chinese broccoli, with the long stems of Chinese broccoli and the florets of the standard variety. Broccolini has a milder, sweeter flavor than the standard, and the long stems give it an elegant look on the plate.

Interestingly, broccolini was invented in 1993, so there’s a reason that it’s new to the scene! It’s becoming easier to find at standard grocery stores, usually next to the standard broccoli. Look for small bunches of broccoli with long stems.

How to shred cabbage…the easy way

Ever had trouble cutting cabbage? Until I learned this trick, I’d always hack at a cabbage with my knife and end up with uneven pieces. Alex and I figured out a slick way to cut cabbage that ends up in even pieces that are just the right size. Here’s what to do (or watch our video of how to cut cabbage):

  1. Remove any outer layers of the cabbage that seem tough or are not fresh, and discard them. With a large chef’s knife, slice off the root of the cabbage.
  2. Cut the cabbage in half through the stem. Then cut it into quarters.
  3. Remove the root of the cabbage by cutting it out with two diagonal slices.
  4. Thinly slice the cabbage in the short direction, using a circular motion with the knife.

Cabbage salad dressing, and a trick

The dressing for this cabbage salad could not be easier! Equal parts lemon juice and olive oil come together with big flavor. Using Dijon mustard puts it over the edge, giving it a savory and spicy undertone. Because it’s not a normal vinaigrette, you don’t even need to worry about an emulsion. Simply whisk together the ingredients.

Here’s a little trick to save a bowl: whisk together the dressing in the bottom of the large bowl you plan to serve the cabbage salad in. Then add the cabbage and toss to combine! You don’t need any extra bowls to whisk the dressing.

Ingredients

Meet the perfect Caesar salad! Of course you can buy a packaged store-bought version, but make it homemade there’s absolutely no comparison.

We’ve perfected all the elements to a great homemade Caesar salad. The savory, creamy Caesar dressing will become a household favorite. Those crunchy garlicky croutons—well, you’ll be eating them off the baking sheet. Alex and I have made this recipe more times than we can count, often topped with protein for an easy dinner. From the first bite of this homemade Caesar salad, you’ll be singing its praises! Here are the ingredients to make this classic salad:

  • Croutons: It’s best with homemade croutons, but you can use store-bought in a pinch. For homemade, tearing the the bread into uneven pieces before baking makes fluffy, crunchy orbs.
  • Caesar dressing: This homemade Caesar dressing recipe is so good, you won’t want to buy it again. It’s made of mayonnaise, Parmesan cheese, Dijon mustard, garlic, anchovy paste or Worcestershire sauce, and lemon juice. We’ve also got a lightened-up spin on it using Greek yogurt (keep reading).
  • Romaine hearts: Romaine hearts, the sweet and crunchy portion of a head of romaine, are best for a Caesar salad. These are sold usually in packs of 3 in the grocery. You can also use a large head of romaine lettuce, but the leafier dark green portions of the lettuce don’t taste as good.
  • Parmesan cheese shavings: You need grated Parmesan cheese for the dressing and shredded for the salad. If you don’t want to buy two separate types, grab a large block at the store.

This Caesar dressing recipe is our favorite that we’ve been making for years! It’s easily made vegetarian using vegan Worcestershire sauce and vegetarian Parmesan cheese. Homemade croutons

Step 1: Make the Homemade Croutons, tearing the bread into pieces instead of slicing it into cubes. (This makes the best Caesar salad, but homemade croutons are optional).

Step 2: Whisk together the dressing ingredients in a bowl. Store leftovers refrigerated in a covered jar for up to 1 week.

This Caesar dressing recipe is our favorite that we’ve been making for years! It’s easily made vegetarian using vegan Worcestershire sauce and vegetarian Parmesan cheese. Here are a few tips for this Caesar dressing:

  • Anchovy paste is optional, but adds great flavor. Traditional Caesar dressing gets its savory flavor from anchovies, and it adds a nice sharp flavor that’s the signature of the classic. A vegetarian Caesar dressing with vegan Worcestershire sauce (or this Worcestershire sauce substitute) tastes just as good.
  • Try our lighter version with Greek yogurt. Swap out the ¾ cup mayonnaise in this recipe for ¼ cup mayonnaise, ½ cup Greek yogurt, and 1 tablespoon olive oil. It helps reduce calories and makes the salad taste lighter and fresher. We like it even better!

Storing leftovers and make-ahead tips

Once you’ve got your creamy dressing and crunchy croutons, all you need is romaine hearts and Parmesan cheese shavings to bring together that perfect Caesar salad. Want a few time savers for putting it together? Here’s how to make it ahead:

  • Make the dressing up to 1 week in advance. The flavor tastes just as good made in advance.
  • Make the croutons 2 days in advance. Make the croutons and let them cool completely. Then store in a sealed container for up to 2 days.
  • Store components separately. Leftovers store best without the dressing, since dressing makes the lettuce and croutons soggy over time. Store the ingredients separately without dressing, then toss together immediately before serving.

Vegan variation

Want a plant-based or vegan variation? Whip up this Vegan Caesar Dressing! You’ll use a blender to mix chickpeas with Dijon mustard, garlic, olive oil and more. It might sound odd, but trust us. We think this Vegan Caesar Salad is just as tasty!

For much of my career as a cookbook author and recipe writer, I’ve been trying to convince people to make homemade salad dressings and sauces. While I am still 100% in that camp, I get why it’s so much easier to do store-bought. When I’m in the middle of a recipe, there’s nothing more deflating than a sauce or dressing recipe that uses a long list of ingredients or a blender!

Here’s our new hack: hummus dressing! Yes, you can use that purchased tub (or homemade if you have it) as the basis for a 3 ingredient recipe. Use it as a hummus salad dressing for greens, or even a hummus sauce for bowl meals. It’s such a fun trick!

Use a quality brand of hummus

Here’s the most important thing about this hummus dressing: make sure to use a quality brand of hummus! We suggest steering clear of the popular Sabra brand: the flavor has a strong chemical aftertaste (possibly due to the citric acid used as a preservative, at least according to Reddit).

Make sure to use a hummus brand with a creamy, tangy and smooth flavor. Experiment to find a brand you love. (We have a few we like, which we can respond to in comments if you are interested!)

Tips for making hummus dressing

This humus dressing is more of an idea than a strict recipe, so keep that in mind when making it! It’s all about adjusting quantities so you have the right consistency and flavor. Again, make sure to use a quality hummus brand. Here are a few notes:

  • Use more liquid if it does not come to a drizzle-able consistency. You can add more lemon juice or water.
  • Adjust the flavor with a pinch of salt or sugar if desired. All hummus brands vary, so you may find you need a pop from salt. If it tastes too acidic, add a pinch of sugar to balance it out.

Storing leftovers

This hummus dressing stores up to 5 days refrigerated. It thickens when cold, so you may want to bring it to room temperature and add a little water if necessary to bring to a consistency that is able to drizzle.
